Summer Veggie Menu

One of the greatest enjoyments of summer is the bounty of fresh veggies. Of course you may only have a few ideas for what to do with these veggies and if you are anything like me, you can end up eating the same thing all the time. So here are a few ideas for summer veggies that can help you change up for menu, or that you can just try for your own enjoyment.
Grilled Eggplant Recipe
You will need:
2 Small Asian eggplant per person
Olive oil
Sea salt
Slice the eggplant lengthwise into half inch slices or thirds, making sure not to slice all the way to the top, leaving each slice connected at the stem. Fan out the eggplant and brush both sides of each slice with olive oil. Put over a hot grill, and cook until the eggplant is tender and there are blackened grill marks. Sprinkle with sea salt and serve warm.
Steamed Snow peas with Garlic and Ginger
You will need:
1 lb Snow peas
2 tbsp Grated ginger root
2 tbsp Soy sauce
2 tbsp Rice vinegar
2 tbsp Sesame oil
Start by gently steaming the snow peas. Whisk the ginger root, soy sauce, rice vinegar and sesame oil together. When mixed pour over the steamed snow peas.
Summer Garden Coleslaw
You will need:
1/2 Small cabbage
1 Colored bell pepper
1 Cucumber
1 1/2 Cups cherry tomatoes
1/2 Cup mayonnaise
2 tbsp Freshly squeezed lemon juice
Salt and Pepper to taste
Start by coarsely chopping the cabbage, you do not want it to be so fine that it is grated. Next peel the cucumber, then cut it into quarters and slice into small 1/2 inch thick slices. Core and quarter the bell pepper, chopping into about the same size pieces as the cucumber. Add all of the vegetables together, including the tomatoes into a large bowl. Then whisk the mayonnaise and freshly squeezed lemon juice together and add to the veggies. You can add as much or as little dressing as you like. Finish with salt and pepper to taste.
