Skewered Seasonal Vegetables
- Favorite vegetables - like eggplant, summer squash, onions, bell peppers, zucchini, tomatoes...
- olive oil
- 1 tbsp of dried rosemary or several spring of fresh
Choose a wide selection of fresh in-season vegetables. My personal favorites include eggplant, summer squash, onions, and bell peppers. Other good options include zucchini, tomatoes and more. Rinse all vegetables off thoroughly. Chop all vegetables into 1 inch pieces. You can slide onto skewers or if you prefer toss into a grilling basket. Lightly coat the vegetables in olive oil and grill until vegetables are done through and slightly browned.
