Pumpkin Curry


  • olive oil
  • 1 large onion, coarsely chopped
  • 2 cloves garlic, chopped
  • 3 tsp curry powder
  • 1/4 tsp garam masala
  • salt
  • pepper
  • 2 lbs fresh pumpkin, seeded, peeled and chopped into 1 inch sq pieces
  • 3 medium red potatoes
  • 1 1/2 cups chicken broth
  • 1 cup peas


Heat the olive oil in a large heavy bottomed sauce pan or deep skillet. Sautee the onions until softened and golden brown, add the garlic and cook for another minute or so. Stir in the curry powder, garam masala, salt and pepper to taste. Stir to combine, then add the pumpkin and potatoes, combine well and cook for another 5-7 minutes. Add the chicken broth, reduce the heat and cover. Simmer for about 15-20 minutes before adding the peas. After adding the peas continue to cook for another 5 minutes or until the peas are just tender. Serve hot over steamed rice.
