Grilled Veggies with Feta in a Whole Wheat Pita

Ingredients

  • Variety of grilled veggies like zucchini, yellow squash, asparagus, onions, etc. - sweet potatoes are awesome on this sandwich
  • 1 oz feta cheese
  • Couple leaves of raw baby spinach
  • Whole wheat pita

Directions

  1. Assemble a variety of grilled veggies like zucchini, yellow squash, asparagus, onions and sweet potatoes and place them in the pita
  2. Top with feta cheese
  3. Add raw baby spinach
  4. Wrap in foil and grill until heated through
