
A three-bean salad made with edamame, buttery young soybeans. Can be made a day in advance. Adjust onion to taste.
Edamame Three Bean Salad Recipe

Ingredients
- 1 1/2 c thawed, frozen shelled edamame (10 oz.)
- 1/4 c. olive oil
- 1 tsp. ground cumin
- 1 (15 oz.) can black beans, drained and rinsed
- 1 (15 oz.) can black-eyed peas, drained and rinsed
- 1/2 c chopped red onion
- 2 c thinly sliced celery
- 2 T fresh lime juice
- 1/2 c chopped fresh cilantro
- 1 tsp. finely chopped garlic
- 1 1/2 t salt
- 1/4 t black pepper
- 1/4 c finely chopped red pepper
Directions
Thaw edamame in the refrigerator overnight or in a bowl of warm water. Mix remaining ingredients and let stand for ten minutes, to let the flavors blend. Chill and serve.
