The Northwest region of the United States offers some of its own unique cuisine. Here people enjoy cooking with amazingly fresh ingredients, especially seafood. These are a few of the very best recipes of the Northwest region.
Cedar Plank Grilled Salmon
You will need:
1 cedar plank, large enough for salmon fillet
1 salmon fillet
6 tbsp brown sugar
1 tsp cayenne pepper
1 tbsp vegetable oil
salt and pepper
Start by soaking the cedar plank in water for 20 minutes. This will allow the flavor of the cedar plank to infuse into the salmon. Next start warming the grill to high, either charcoal or gas, adjust the heat to medium or allow the coals to burn for a few minutes longer.
Combine the remaining ingredients until will mixed. Put the salmon on the plank skin-side down. Brush the salmon with the brown sugar mixture. When the salmon is covered take the plank and salmon and place on the grill. Cook for about 30 minutes until the salmon is just cooked and the surface fat just starts to turn white. Serve immediately.
Cold Cracked Dungeness Crab
You will need:
1 Dungeness crab per person, cleaned
Butter, melted
You can purchase live crab or frozen crab at the grocery store. At the grocery store you can purchase a cooked cleaned crab, which is a very simple way to eat crab. If you want a live crab you can boil it at home and then clean it. Once the crab is cooked served chilled with plenty of melted butter. Make sure that you have tools to crack the crab shell and eat the flesh after dipping in melted butter.
Strawberry Rhubarb Crisp
You will need:
8 cups Rhubarb, sliced into 1 inch thick slices
1 pint Strawberries, washed and quartered
1/2 cup flour
1 cup sugar
1/2 cup Brown sugar
1/2 cup Flour
1/2 cup Butter
1 tsp cinnamon
Grease a 9X13 inch baking pan and preheat the oven to 350 degrees. Slice the rhubarb and clean and slice the strawberries. Mix the rhubarb and strawberries in a large bowl, add 1/2 cup flour and 1 cup sugar and mix well. Leave the rhubarb in the bowl. Next make the topping, you can place the remaining ingredients in a food processor and process until the mixture is the consistency of bread crumbs. Stir the rhubarb again and pour the mixture in the pan. Sprinkle with the topping and bake for an hour.
